Older Macs powered by PowerPC CPUs, for example, cannot run the operating systems designed for Intel-based computers.

In simple terms, the Macs cannot boot an older OS version than what shipped when new, even when installed in a Virtual Machine. If your Mac is a few years old, it is likely the current macOS version is not running on your Mac; Apple drops support for Mac models that it claims are outdated or outdated. Officially, the OS available on that Mac when you bought it is the oldest version of macOS that will work on that Mac. MacOS Catalina can be installed on Macs capable of running OS X 10.9.
If you are running the Mojave MacOS on your Mac, chances are good that you will be able to install MacOS Catalina. When Mojave, Catalina, or Big Sur Big Sur is released, you are going to need a newer Mac, or newer, to run Mojave. If you have enabled Automatic Updates, Mac will let you know the upcoming MacOS is available.
If your Mac is eligible for Mojave upgrade, the easiest way to install Mojave is by turning on Automatic Updates. A Mac running macOS High Sierra or higher will need an upgrade through the App Store. It is more than likely you will need an upgrade from the Source-Available update before you are safe to update to the next major version of macOS. While firmware updates are not included (these are model-specific, and Apple releases these only to supported Macs), your macOS will still be far safer than it was under the older Mac OS X versions you were running previously.
If you want to run the latest version of macOS, but Apple is no longer supporting your Mac, your best bet (in terms of speed, system stability, and Apples full suite of features) is simply to get a new Mac. The best Mac OS release is the one to which your Mac is entitled for an upgrade.

You will need an external disk to install future major updates of macOS, such as macOS 13 (assuming, of course, your Mac is going to be unofficially compatible with it). I know you are familiar with High Sierra, but High Sierra is an updated macOS for MacBook Pros. The most supported macOS by Apple for your 2011 iMac is MacOS High Sierra.
The highest versions of Mac OS X, OS X, or macOS supported for every G3 and subsequent Mac are below. A list of compatible versions of macOS (OS X) is posted for each Mac model. MacBook models that are early 2015 and newer should be capable of running Catalina 10-S and Catalina 14-S, according to instructions from Apple.
In the case of Catalina, the latest version of macOS, Catalina does not run on models released prior to mid-2012 (and on Mac Pros prior to late 2013). This happens when using the release of the MacOS Catalina Installer app, which is incompatible with the version of the Catalina patcher that you are using. As a result of this change, all Mac computers running macOS 10 are now unable to benefit from our software support. The improvement does not seem to put a lot of extra stress on the Macs hardware, as nearly all devices capable of running macOS Mojave from last year are able to run Catalina as well.
As you can see, the upgrade drops support for older, plastic MacBooks, and for 2009, 2010, and 2011 models of MacBook Pro, Air, Mini, and iMac. In terms of time for Macbook Pro upgrades, mid-2010 through late 2011 is preferable to High Sierra. There were a total of four MacBook Pros released during 2012, including the last-year Retina model.

As the majority of the hardware components of the Mac, or components that are similar, were made available for purchase after the switch to Intel, several technically competent groups developed software for installing macOS on computers other than Apples. Apple has begun installing Catalina on newer Macs, except for the 16-inch MacBook Pro and the 2019 Mac Pro, but because those older Macs may still be able to run Mojave, it is possible–if somewhat difficult–to downgrade to Mojave. High Sierra is still usable, however, as long as you are a core user not running tons of apps and fiddling with your Macs performance settings. Apple and others provide versions of the X Window System GUI that may let those apps work with a approximation of macOSs appearance.
