Hide Apps On Apple Watch
If you want to hide apple watch apps on your iPhone, you don’t need to worry. You should go to the apple watch app on your iPhone and select the my watch option. Then scroll down to see the apps installed on your watch. You should select the app you want to hide.
Here, swipe to the bottom and locate an app that you would like to hide from or delete from the Watch. Then, to open a hidden app, navigate to the category corresponding to it.

As long as an app is downloaded on your iPhone, not hidden by Siri and Search, you can use the iPhone Search function to quickly locate the hidden app on your iPhone.

You cannot use any other methods to open apps that are hidden with Screen Time. Only by removing Screen Time restrictions can you access those apps. If you receive an alert about the restrictions being activated when opening, you must enable apps using Screen Time.

If you still cannot locate an app, that means either you or your parents have restricted it through Screen Time. Once the app is added to the iPhone, depending on the settings, you might have to use the instructions from above to find the app and add it to your Home Screen.
If you would like to revert back to the built-in Apple app, you can download it from the App Store to your iPhone or Apple Watch. Then, if you change your mind and decide to reinstall an app, you can install it again with ease. You might want to remove another app, and you can easily repeat that action, if needed. Too many apps could potentially clutter up the Apple Watchs home screen, and finding and opening specific apps may get hard. To solve this, configure your iPhone to load apps directly onto your Home screen instead of just the app library.
You will likely see a screen that asks you to use the App Store on the Apple Watch, but you can tap Discover Watch apps from the iPhone to browse through App Store.
