Uninstall Big Sur

Erase removes everything from your Mac, but you can restore data from your Time Machine backup afterwards. To get back into Catalina using macOSs native Time Machine features, you will want to begin by wiping out anything stored on the primary system drive. Remember, backing up your Mac using Apples Time Machine would be useless here, since you will restore Catalina with your data.
With a pre-Monterey Apples Time Machine backup in hand, you can restore the Mac to pre-update state, and then restore all the files that you created after installing Monterey. You can now restore all of your files and data, and get your Mac back in the state it was before installing macOS Big Sur. When you do not have a backup from Time Machine, you can downgrade to macOS Catalina, Mojave, or whatever other compatible version is running on your Mac using the bootable installer. If your only choice is to reinstall Big Sur, then you will have to make a bootable installer using macOS Catalina instead, and use it as your startup drive. You can install Big Sur, Catalina, or an older version of the Mac OS on your Mac, but you will have to wipe your Mac first, which can mean losing data unless you have made backups.
You will have to reformat this drive and prep it with Disk Utility, and then use Terminal to type in the command createInstallMedia for the version of the Mac OS you are installing. Start should ensure the “Reinstall” option is set to the MacOS version that came on your Mac.
